Vegetable Soup with Rolled Barley

This soup may help lower your blood pressure.
Broccoli is rich in vitamin K and potassium to help preventing brittle-bone disease and lower blood sugar levels. Rolled barley contains lots of protein, fiber, vitamins, and minerals to support a healthy heart.


  • 6 tbsp Oshi Mugi (Rolled Barley)
  • Salt and Pepper
  • 80g (2.82 oz / 0.18 lb.) Broccoli
  • 60g (2.12 oz / 0.13 lb.) String Beans
  • 1/2 Onion
  • 500cc (16.9 fl oz) Soy Milk
  • 1 Soup Stock Cube


  • Cook rolled barley for 5 minutes in boiling water with a pinch of salt
  • Cut broccoli into small pieces
  • Parboil the broccoli in boiling water with a pinch of salt
  • Parboil string beans in boiling water with a pinch of salt, and cut in to 2.5 cm lengths
  • Coarsely, cut onion into bite size pieces
  • In a pan, bring 500cc (16.9 fl oz) soy milk to boil
  • Add a soup cube and onion
  • Simmer until the onions are tender
  • Add the string beans, broccoli, and barley, and continue simmering
  • Season with salt and pepper to taste, and serve
