Soba Noodle Pasta with Walnut Sauce

Soba noodles are rich in polyphenols, which help prevent dementia and support an active brain. Sesame helps to reduce bad cholesterol and activate function of liver. The combination of soba and sesame helps to enhance brain development.


  • 120g (4.23 oz / 0.26 lb.) Soba Noodle
    For Walnut Sauce
  • 2 tbsp Walnut (Mince)
  • 3 tbsp Soy Sauce
  • 3 tbsp Mirin (Sweet Sake)
  • 3 tbsp Cooking Sake
  • 4 tbsp White Sesame Paste
  • 40cc (1.35 fl oz) Soup Stock
  • Salt
  • 60cc (2.03 fl oz) Water
  • 4 tsp Potato Starch


  • Chop 2 tbsp of walnuts
  • In a pan, combine the chopped walnut, 3 tbsp of each soy sauce, mirin (sweet sake), and cooking sake, 4 tbsp of white sesame paste, 40cc (1.35 fl oz) of soup stock, and little salt
  • Heat and stir
  • When the liquid begin to boil, stir potato starch to dissolve to water to thickened the sauce
  • Season the sauce with salt
  • Boil up soba noodles
  • Immediately, plunge it into cold water once they are cooked
  • Place on the serving dish and pour on walnut sauce, and serve
