Red Chili Paste Stir-fry with Bitter Melon and Pineapple

A unique way to up your vitamin C intake.
Bitter melon and pineapple are rich vitamin C to help repair skin damage. They are also high fiber foods that will help you feel full longer. Gochujang (Korean red chili paste) assists digestion and supports an overall healthy diet.

Ingredients

  • 1/2 Bitter Melon
  • 100g (3.53 oz / 0.22lb.) Canned Pineapple
  • 3 tbsp Virgin Olive Oil
  • 1 tbsp Gochujang (Korean red chili paste)
  • Salt and Pepper
  • 3 tbsp White Wine
    Topping
  • 1 tbsp Pine Nuts or Goji berry (Wolf berry) fruit

Directions

  • Cut bitter melon in half lengthwise
  • Spoon out seeds and white fibers which is sources of bitterness
  • Cut it into 3mm (0.12 inch) slices
  • Cut the canned pineapple into bite size pieces
  • In a frying pan, heat some virgin olive oil
  • Add the bitter melon and pineapple, and stir fry
  • Season with 1 tbsp of gochujang (Korean red chili paste), salt and pepper to taste, and continue stir frying
  • Add 3 tbsp of white wine, boil down to remove water for 1 minute
  • Serve with Goji berry (Wolf berry) and pine nuts as desire
