Japanese Mustard Spinach, Okra, and Maitake Mushroom Curried Rice

A dish for people with metabolic syndrome.
One of the main ingredients in curry is turmeric. Turmeric is a popular healthy food and good for liver. It is also said to be effective for helping prevent dementia. Maitake mushroom contain vitamin D, vitamin B2, and niacin to help clean the blood.


  • 300g (10.58 oz / 0.66 lb.) Sprouted Brown Rice, White Rice, Black Rice [Brown Rice 3 : White Rice 7 : Black Rice 1]
  • 5 Okura
  • 1/4 bundle of Komatsuna (Japanese mustard spinach)
  • 80g (2.82 oz / 0.18 lb.) Maitake Mushroom
  • 1 clove of Garlic
  • 1/2 Onion
  • 1 piece of Ginger
  • 1/3 Red Chili Pepper
  • 1 tbsp Vergin Olive Oil
  • 150g (5.29 oz / 0.33 lb.) Ground Beef
  • 100cc (3.38 fl oz) Water
  • 50g (1.76 oz / 0.11 lb.) Curry Roux
  • 1 tbsp Worcestershire Sauce
  • Salt & Pepper
  • Pine nuts and Walnuts


  • Cook 3 parts of sprouted brown rice, 7 parts polished rice, and small amount of black rice
  • Rub the okura with a pinch of salt to remove its fuzz.
  • Lightly rinse and slice into thin 5mm (0.20 inch) circles
  • Cut the komatsuna into 2cm (0.79 inch) lengths
  • Ttrim off the hard tips and cut into bite size pieces
  • Separately mince the garlic and onions
  • Peel the ginger and mince it
  • Remove the seeds from red chili peppers and cut them into thin circles with scissors
  • In a frying pan, heat some virgin olive oil
  • Add garlic, ginger, onions, and red chili peppers, and stir-fry at medium heat
  • When everything starts to tenderize, add ground beef. Stir-fry until the beef starts a fall apart
  • Stir fry the komatsuna, okura, and maitake mushroom together
  • When everything starts to tenderize, add 100 cc (3.38 fl oz) of water and bring to a boil
  • Add 50g (1.76 oz / 0.11 lb.) of finely ground curry roux and 1 tbsp Worcestershire sauce. Stir fry at high heat
  • Season with salt & pepper to taste
  • Top rice with curry, and serve
