Deep Fried Lotus Root and Okara (Soy Pulp) Meatball

Meatballs with a healthy twist.
Lotus root contains dietary fiber to support the detoxifying process and help clean the blood. Okara (bean-curd) has abundant amounts of dietary fiber to help activate intestinal functions.


  • Some Sakura Shrimp (Sergia lucens)
  • Some Peanut
  • 100g (3.53 oz / 0.22 lb.) Lotus root
  • 2 pieces of Garlic
  • 1/2 Onion
  • 60g (2.12 oz / 0.13 lb.) Carrot
  • 2 tbsp Virgin Olive Oil
  • 80g (2.82 oz / 0.18 lb.) Okara (Bean curd)
  • Salt and Pepper
  • Some Black Sesame
  • Salad Oil 7: OliveOil 3 + little Saseme Oil
    Option to add
  • Green leafs
  • Aojiso (Green perilla)


  • Mince Sakura shrimps for a frying batter
  • Finely chop peanuts
  • Grate a lotus root
  • Separately mince garlic, onion, and carrot
  • In a frying pan, heat some virgin olive oil
  • Add the garlic, onion, and stir fry until they are translucent light brown
  • Add the carrot, and continue stir frying
  • In a bowl, combine the grated lotus root, stir the fried ingredients, and okara
  • Season with little salt and pepper, and mix them together
  • Mix and mash the mixture by hand
  • Shape the resulting paste into 2cm balls
  • Sprinkle on fry coatings black sesame seeds, chopped nuts, and minced Sakura shrimps
  • Deep fry at 180℃ (350 F) cooking oil until crispy, and serve
