Curry and Rice with Shrimp

A dish that will fortify your health in several ways.
Broccoli is rich in vitamin C, which is believed to prevent colds and repair skin blemishes. The shrimp in this recipe helps to clean the blood and deliver carotenoids. These are linked to a decreased risk for diabetes-related health problems. Curry spices also helps to reduce blood sugar levels.


  • 6 Shimps
  • 1 Large size of Onion
  • 1 Middle size of Carrot
  • 3 Eringi Mushrooms
  • 1 head of Broccoli
  • 2 tbsp Virgin Olive Oil
  • 850cc (28.7 fl oz) Water
  • 200g (7.05 oz / 0.44 lb.) Curry Roux
  • 1 tsp Turmeric
  • Salt
  • Some Pine Nuts and Walnuts


  • Peel the prawns and slip their back to devein
  • Thinly slice the onion
  • Cut the carrot into bite size pieces
  • For Eringi mushroom, trim off the hard tip and shred lengthwise by hand
  • Cut the broccoli into small pieces
  • Parboil the broccoli in boiling water with pinch of salt
  • In a thick pan, heat some the virgin olive oil
  • Add the onion, carrot, and Eringi mushroom, and stir fry
  • When the contents give out an aroma, add the shrimp, and continue stir frying
  • When the shrimps change color, remove them
  • Add 850cc (28.7 fl oz) of water and bring it to the boil
  • When the liquid begin to boil, skim off the scum
  • Simmer over low heat for 5 minutes
  • Remove from the heat and break it to dissolve 200g (7.05 oz / 0.44 lb.) of curry roux
  • Add 1 tsp of turmeric, and add the prawns
  • Then add the parboiled broccoli and simmer again at low heat until the sauce has thickened for 5~10 minutes
  • Serve with topped pine nuts as desire
