Brown Rice Pilaf with Green Peas

A vegan dish designed to work against metabolic syndrome and high blood sugar.
Peas are rich in protein, fiber, and antioxidants. The high fiber in peas can help slow down the digestion of sugars, and their antioxidant properties may help reverse insulin resistance and symptoms of type 2 diabetes. This recipe also contains mushrooms, which are linked to healthy metabolism.


  • 300g (10.58 oz / 0.66 lb.) of Brown Rice
  • 6 Japanese Parsley (Mitsuba)
  • 1/2 clove of Garlic
  • 1 Large size of Shiitake Mushroom
  • Some Carrot
  • Some Onion
  • 3 tbsp of Virgin Olive Oil
  • 60g (2.12 oz / 0.13 lb.) of Green Peas
  • Salt and Pepper
  • 1/2 tbsp of Soy Sauce
  • 1 tsp of Lemon Juice


  • Cook up the brown rice
  • Separately mince mitsuba (Japanese parsley), garlic, shiitake mushrooms, and carrot
  • Coarsely mince onions
  • In a pan, heat 3 tbsp of virgin olive oil
  • Add the garlic, onions, carrot, and shiitake mushrooms
  • Lightly stir fry
  • Add mitsuba (Japanese parsley) and stir fry until soft
  • Add cooked brown rice and continue stir frying
  • Thoroughly mix the brown rice into other ingredients and add the green peas
  • Season with salt and pepper to taste
  • Add 1/2 tbsp soy sauce and 1 tsp lemon juice
  • Mix together, and serve
