Onion Salad with Garlic and Basil Dressing

Ingredients

  • 1 Large Purple Onion
    For Sauce
  • 3 clove of Garlic
  • 1 tbsp Olive Oil
  • 1 tbsp Basil Paste
  • 3 tbsp White Wine Vinegar
  • 1 clove of Fired Garlic Chips
  • 1 Red Chili Pepper
  • 3 tbsp Virgin Olive Oil
    Topping
  • 1 tbsp Pumpkin seed

Directions

  • Thinly slice the purple onion
  • Soak in a plenty of water for 30 minutes to remove bitterness and scum
  • [Make the sauce] Leave the garlic chips and red chili peppers slices in virgin olive oil for at least 1 hour to make the sauce base
  • In a frying pan, heat some virgin olive oil, and add the minced garlic and stir fry
  • Remove the garlic, add 1 tbsp of basil paste, 3 tbsp of white wine vinegar, and 3 tbsp of sauce base
  • Beat with whisk to make a sauce
  • Pour the sauce over the sliced onions
  • Top with pumpkin seeds as desire
