Canned Tuna, Brown Rice, and Red Bean Paste (Red Miso) Meatloaf

Ingredients

  • 100g (3.53 oz / 0.22 lb.) Sprouted Brown Rice
  • Some Sesame Oil
    For Sauce
  • 100cc (3.38 fl oz) Water
  • 1/2 tbsp Soy Sauce
  • 1/2 tbsp Mirin (Sweet Sake)
  • 1/2 tbsp Potato Starch
    For Ingredient of Meatloaf
  • 1/6 Green Onion
  • 100g (3.53 oz / 0.22 lb.) Boild Soybeans
  • 50g (1.76 oz / 0.11 lb.) Canned of Tuna
  • 1 tsp Ginger Juice
  • 1 tsp Soy Sauce
  • 1 tsp Soup Stock
  • Some Sugar
  • 1 tbsp Potato Starch
  • 1 tbsp Red Miso Paste
    Option to add
  • Some Myoga (Japanese Ginger)

Directions

  • Cook up the brown rice
  • [Make the Sauce] In a pan, combine 100cc (3.38 fl oz) of water, 1/2 tbsp of each soy sauce and mirin (sweet sake), and warm gently
  • When the liquid begins to boil, stir the potato starch to dissolve the water little by little until the sauce thickens
  • When the sauce boils, set it aside
  • Mince green onions
  • Place the cooked brown rice and boiled soy beans in a plastic bag
  • Finely mash by hand
  • To this mixture, add tuna, green onions, 1 tsp each of ginger juice, soy sauce, and soup stock, a little sugar, 1 tbsp each of potato starch and red miso Thoroughly mix by hand
  • Shape the mixture into ovals, 2.5cm (0.98 inch) across
  • Heat the frying pan and add some sesame oil
  • Fry the meat balls until golden brown on both sides
  • Place on the serving dish, and pour on sauce and, serve
